Paneer Tikka Naanza

Chef Nikita Varma (@iamdatingfood) takes naan to the next level with this Italian-inspired "Naanza" perfect for an Ooni oven. Topped with flavorful paneer tikka, veggies, and gooey mozzarella, this fusion recipe combines the best of both worlds in just 5-7 minutes of baking!


Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon Baking Soda
  • 2 tablespoon yogurt
  • ¾ cup warm water (adjust as needed)

    For Paneer Tikka:

    • 400g paneer, cubed
    • 1 cup thick yogurt
    • 2 tablespoons ginger-garlic paste
    • 2 tablespoons lemon juice
    • 2 tablespoons vegetable oil
    • 2 teaspoons garam masala
    • 2 teaspoons red chili powder
    • 1 teaspoon turmeric powder
    • Salt to taste
    • Bell peppers and onions, cut into chunks

          Directions

          1. Make the Dough: In a mixing bowl, combine the flour, sugar, and salt. Add yogurt and oil. Gradually mix in warm water until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place the dough in a lightly greased bowl, cover it, and let it rest for about 1hr.

          2. Preheat the Ooni Oven: Preheat your Ooni oven according for around 450°C.

          3. Shape the Naan: Divide the dough into 4-6 equal pieces. Roll each piece into an oval or circle about ¼ inch thick.

          4. Cooking the Naan: Once the oven is hot, slide the naan onto the stone. Cook for about 1-2 minutes until bubbles form and the bottom is golden. Flip and cook for an additional 1-2 minutes.

          5. Marinate the Paneer: In a bowl, mix yogurt, ginger-garlic paste, lemon juice, oil, garam masala, red chili powder, turmeric, and salt. Add paneer, bell peppers, and onions. Coat well and marinate for at least 30 minutes (or longer for better flavor).

          6. Grill the Paneer: Place the marinated paneer in a cast iron skillet and grill in the oven until lightly charred.

          7. Assemble: Place the naan on a pizza peel. Spread a thin layer of tomato sauce. Top with grilled paneer tikka and veggies. Add a generous amount of grated mozzarella cheese.

          8. Baking: Slide the naan into the Ooni oven. Bake for 5-7 minutes, or until the cheese is melted and bubbly and the naan is golden brown.
