Ingredients
- 250g/330g classic pizza dough
- Chopped fresh spinach
- 1/2 tub cream cheese
- 3 cloves of garlic, crushed
- 2 spring onions chopped
- 100g mozzarella
- 1 tbsp thyme leaves
- 1 tbsp flat leaf parsley
- Halved artichokes
- 2 tbsp fresh rosemary
- Grated parmesan

In a food processor, blend the garlic, spring onions, mozzarella, herbs and cream cheese together until smooth. Add the spinach, season with salt and pepper to taste and give the mixture a final pulse.
Fire up your Ooni pizza oven. Aim for approximately 450˚C on the baking stone inside. You can check the temperature inside your Ooni quickly and easily using an infrared thermometer.
Stretch the pizza dough ball out to 12”/16” and lay it out on your Ooni pizza peel. Spread an even layer of the spinach and cream cheese mixture across the pizza base. Add the artichoke halves and sprinkle the rosemary on top of the pizza.
Slide the pizza off the peel and into your Ooni, making sure to rotate the pizza regularly. Once cooked, remove the pizza from the oven and sprinkle the parmesan cheese on top.
